Buffalo Chicken Cassava Taco Night

Ingredients:
2 Organic free range pasture-raised chicken breast
2-4 Siete Foods Cassava Flour Taco, or any similar brand
1 small Radicchio (cabbage is a good alternative)
1 cup Arugula
1 Avocado, ripe
2-3 Tbsp. Tessemaes Ranch dressing, or a brand with the least ingredients as possible
1 to 1 1/5 cups Tabasco Buffalo Sauce
1 cup Chicken stock or Water
Salt + Pepper, to taste
Seasonings of preference – ideas: garlic powder, onion powder, smoked paprika and chili powder

Instructions:
Marinate chicken with seasonings of your choice for 20 minutes, or feel free to do this the night before and let marinate in fridge overnight
Simmer chicken breast in chicken stock or water on medium heat so meat becomes tender
Add salt + pepper to taste
Once cooked, shred meat with a fork
Add meat back into pot and add Tabasco buffalo sauce
Scoop a heaping mound of chicken onto cassava flour taco shell
Add radicchio, arugula, avocado, and ranch dressing
Plate and enjoy!
