INGREDIENTS
3 Bananas, ripe
2 cups Oats
3 Eggs, organic-pasture raised
1 cup Honey or to desired sweetness
1 cup Walnuts, crushed pieces
1.5 tsp. Cinnamon
½ tsp. Nutmeg
Dash of Clove, ground
Pinch of Salt
INSTRUCTIONS
Preheat oven at 350 degrees
Blend oats into a flour consistency
Mix all your dry ingredients together, not including walnuts
Mix all your wet ingredients together including bananas
Fold in dry ingredients into wet ingredients completely until a batter-like consistency
This is where you can add the walnuts
Lightly oil each muffin tin mold with coconut oil
Pour batter into molds
Top with whole walnuts as seen in the photos (optional)
Place in oven for 20 to 25 minutes or until done – check donness at 20 minute mark
When fully baked, remove from oven and set aside for 5 minutes
Remove from molds and enjoy!
