Purple Sweet Potato Smash with Roasted Garlic and Herbed Cream Cheese

The orange sweet potato is one of the most popular ones, but have you tried the purple sweet potato? So good!! It has just the right sweet and savory and it goes well with the sweet and savory ingredient combination that I’ve put together here. Try is at home for a nice side to your workweek lunch or dinner. Breakfast is an option too–why not!

Ingredients
1 Purple Sweet Potato
2 Tbsp. Cream Cheese
1/5 Tsp. Dried herbs – I picked Cilantro
2 Garlic cloves
Extra Virgin Olive Oil for drizzling

Instructions
Boil sweet potato until cooked – fork can easily poke through
Heat oven at 400 degrees
Take cooked sweet potato out of water and take two dishes, placing sweet potato on one and using the other to press down onto the potato until it smashes down to about an inch or inch and a half thick
Drizzle olive oil onto a baking sheet pan
Place sweet potato onto pan and drizzle olive oil on top
Place into oven and let roast until top and sides are crispy, about 20 minutes
Add two peeled cloves into the oven on the same sheet pan and let roast for about 10-15 minutes or until it becomes a golden brown
Scoop out cream cheese from its container into a small bowl
Add dried herbs and mix in
Remove sweet potato and garlic from oven when each are done roasting respectively
Place sweet potato onto a plate, smear cream cheese onto sweet potato, garnish with garlic and drizzle everything with honey
