The excitement we have about Friday isn’t about the actually day. It’s the fact that we don’t have to go to work the next one or two days. It’s the break from work that gets us so amped—so we can go out there and “live your best life”, absent from work. This has been so ingrained in our minds that Friday is what we are to look forward to each week. “Work for Friday.” “Live for the weekend.” That doesn’t seem right to me, especially because we live most of our living hours at work. So what does that say about the quality of life?

I asked someone at work how their holiday-break was, and they said it was great. I asked them what made it so great, and they said, “because I wasn’t at work.” Something’s got to change. I don’t believe that we’re women who want to wait for the end of the week because that’s when we get relief from work. I believe we’re women who desire to have excitement and passion for the day ahead, every day.

Let’s not settle for “Friyay”, but instead have the “yay” mentality every day. It’s possible and it feels amazing! Just so you know, I’m not a head-in-the-clouds happy every moment of the work day person. If I say I, I’d be dead lying. What I’m saying is, we can have more hope, excitement, meaning, power and freedom during our workdays and it starts in the mind. I read this statement from an amazing book —“Do not conform to the pattern of this world, but be transformed by the renewing of your mind.” *Wink* [Romans 12:2]  I’m committed to a daily Yay Mentality. Protein Bean Bowl

PROTEIN BEAN BREAKFAST BOWL

Ingredients
2 cups White Kidney Beans/Cannellini Beans, cooked
½ Onions, chopped
2 Garlic cloves, chopped
1 Tomato, chopped
1 cup Spinach, chopped
1 Egg
2 springs Thyme
1 tsp. Paprika (smoked Paprika if preferred)
3 Tbsp. Extra Virgin Olive Oil
Salt + Pepper to Taste
Any chopped green for garnish

Instructions
Add 2 Tbsp. of EVOO to a pot at medium high heat
Add onions to the pot and cook until translucent
Add garlic to pot until soft/cooked but not brown
Add white kidney beans to pot
Add thyme and paprika until fragrance begins to pop
Add tomato and stir
As it cooks, add salt and pepper to taste
Turn off stove, add spinach and let simmer
To a pan at high heat, add 1 Tbsp EVOO
Crack an egg in the pan and fry until done to your liking
Add salt + pepper, and any chopped green in your fridge like parsley for garnish
Add beans and its sauce to a bowl and top it off with the sunny side up fried egg, or any style you chose
