The most common way tomatoes are eaten is as an accompaniment to a dish or a sandwich. It’s like a sidekick, but the main character? Not often enough in my opinion. Here’s the thing, Tomatoes are packed with a whole lot of goodness in them. So when we place one slice in our sandwich or drop a few cherry tomato halves in our salad, it may look pretty and believe me I love a pretty dish, but we could be getting much more of its benefits by adding more tomatoes in our lives.
Tomatoes are a fruit, but seem to casually fall into the vegetable section at the market, likely because of its savory flavor profile. But yep, it’s a fruit! And this fruit has lots of Vitamin C, which helps boost your immune system, Potassium which helps control blood pressure and prevents heart disease, Vitamin K1 which is great for bone health, and Folate aka Vitamin B9, helping you with normal tissue growth and proper functioning cells. A couple benefits of that are the prevention of cancer and aiding in the development of a healthy baby in the womb. That last one is good news for my future and present pregnant sisters out there!
Now knowing some of the key benefits of tomatoes, the question is, “how do I get more tomatoes into my life, like now!” Easy answer, incorporate a tomato-heavy dish to your meal plan this workweek! I’ll take it a step further to make it that much easier for you. I’m giving you the perfect recipe which is a deliciously herby Marinated Tomato Salad. Now you have a great place to start!
You’re going to fall in love with the marinade, so much so, that you may find yourself using it for other dishes too. And I wouldn’t be mad one bit because that’s a brilliant idea!

RISE & SHINE BRIGHT MARINATED TOMATO SALAD
INGREDIENTS
2 small cartons of cherry or grape tomatoes (I chose multi-colored)
2 cups fresh Basil leaves
1/3 cups fresh Cilantro leaves
1/3 cups fresh Mint leaves
1/3 cups Clementine juice (approx. 4 Clementine)
1 ½ Tbsp. Lemon juice (approx. ½ lemon)
1 Tbsp. fresh Ginger, chopped
½ cups Extra Virgin Olive Oil
½ Tsp. Sea salt
Sprinkling of fresh cracked Black Pepper
INSTRUCTIONS
Cut your tomatoes in half and set them aside
Place all herb leaves into a blender with your juices and chopped ginger and blend them together
Remove the blended mixture into a mixing bowl, add the olive oil and whisk the mixture together
Season with salt to taste
Add the tomatoes to the bowl and mix with a large spoon
Plate your Marinated Tomato Salad and top it with fresh cracked black pepper and enjoy!
Note: When measuring the basil, cilantro, and mint leaves in a 1/3 measuring cup, be sure not to press the leaves down tightly. A loose measurement of these leaves is what you’re aiming for.
